Vlahotiri Cheese (also spelled Vlahotyri) by Krinos is a hard, traditional Greek sheep’s milk cheese, weighing 1 lb (about 500g). It’s a relatively modern addition to Greek cheeses, similar to Kefalograviera but with slightly larger holes and a bit less salt. 

Flavor and Texture

  Taste: Tangy, slightly salty, with pleasant spicy or piquant notes. It has a hearty, rich profile that’s milder than some sharp Greek cheeses but still flavorful—some compare it to a milder sharp cheddar with a delicate aroma. 

  Texture: Firm and hard (aged over 90 days, around 38% moisture), making it great for slicing, grating, or melting. It develops a nice chew when cooked. 

Uses

It’s versatile and multi-purpose:

  Saganaki (pan-fried cheese) — fries up beautifully with a golden crust.

  Grated over pasta, pizza, baked dishes, or lamb.

  Sliced on cheese/antipasti platters or meze boards.

  Excellent for melting in sandwiches or casseroles.
