Ingredients

For the BBQ Sauce

  • 2/3Β cupΒ ketchup
  • 1/4Β cupΒ light brown sugarΒ packed
  • 1/4Β cupΒ apple cider vinegar
  • 1/4Β teaspoonΒ ground black pepper
  • 1 1/4Β teaspoonΒ smoked paprika
  • 1Β teaspoonΒ cumin

Pizza Toppings

  • 1/4Β cupΒ onionΒ white, sliced
  • 1/4Β cupΒ zucchiniΒ julienned
  • 8Β ouncesΒ baby portabella mushroomsΒ sliced and sauteed
  • 1/4Β cupΒ potatoΒ grated and placed in ice water so it doesn't turn brown
  • 1Β teaspoonsΒ ginger rootΒ freshly grated
  • 1/2Β cupΒ cauliflowerΒ cut into florettes and roasted

Pizza Dough

  • You can click on the below pizza dough link to get the complete instructions but I wanted to add the ingredients so that the nutrition label would come out correctly.
  • 1 1/2Β cupsΒ whole wheat pastry flour
  • 2Β cupsΒ unbleached all purpose flour
  • 1 1/4Β cupΒ water
  • 1/4Β cupΒ warm water for the yeast
  • 1Β packetΒ yeast
  • 2Β tablespoonsΒ extra virgin olive oil
  • 1 1/2Β teaspoonΒ sea salt

Instructions

For the BBQ Sauce

  1. In a medium saucepan, combine all of the ingredients.

  2. Bring to a boil and then reduce the heat to simmer.

  3. Cook, uncovered for 10 minutes. Stir frequently.

Pizza Dough

  1. You may use any of your favorite pizza dough recipe or a pre-made pizza dough. Β here is a link to theΒ pizza dough that I always make.

  2. You can make it as thin or thick as you like.

For the Toppings

  1. Slice onions, julienne zucchihi, grate ginger root.

  2. Have a small bowl of ice water sitting but your work space. Β Grate the potato and pace in the ice water immediately. Β This keeps it bright white.

  3. Cut cauliflower into small foretts. Β Place on a lightly greased baking sheet. Β bake at 350Β° for 10 minutes. Β Stir and bake 5 more minutes. Β Remove and cool.

  4. Melt 1 tablespoon olive oil in a skillet and add the sliced mushrooms. Β Saute for 10 minutes over medium heat.

Put it all Together and Enjoy!

  1. Place dough in the center of the pizza pan. Β Push out with your fingers to the size that you like. Β You can go all the way to the edge for a thin crispy pizza or keep it smaller for a thicker pizza.

  2. Spread the BBQ sauce all over the dough.

  3. Squeeze out the grated potato and pat dry. Β Sprinkle all around the top of the pizza.

  4. Sprinkle around the remaining toppings, zuke, onion, mushrooms, cauliflower and ginger.

  5. Bake at 425Β° for 18 minutes or until golden brown. Β Slice into eighths.
