Schallenberg Mountain is made with the remaining milk from Emmentaler AOP production and is the only cream-added mountain cheese. Master Cheesemaker Hansruedi Gasser produces this raw milk cheese in the shadow of Schallenberg Mountain.

During the first twelve hours after production, the wheels are turned every two hours. Over the following 4–6 weeks, Hansruedi cares for each wheel daily by hand with a salted water smear. Once a healthy, solid rind develops, the cheese is aged deep inside the mountain for 10–12 months — where nature provides the perfect climate for ripening. It is here that Schallenberg develops its typical aromatic character under the constant supervision of expert affineurs.
