Produced by La Fromagerie Delin, a small producer known in France for its Brilliat Savarin style cheeses, the young cheeses are spirited away to Tours before they bloom. There, Rodolphe le Meunier ages them for 3 weeks in his cellars where they develop a perfectly thin rind.
