As hot as a Charleston summer, this simple blend of freshly shredded cheddar mixed with pimentos, our signature spices, and a secret fiery addition is my version of my mom, Callie's, famous pimento cheese.

Serve on white bread, with a selection of vegetables, or simply melt the entire container of pimento cheese and serve alongside pico de gallo and tortilla chips for a new take on the average cheese dip.
