We teamed up with our friends at Hopworks Urban Brewery, a fellow B Corporation in Portland, Oregon, to create a certified organic Chocolate Stout made with premium Valrhona chocolate.

During the cheesemaking process, we pour the freshly brewed beer straight into the vat with the curds. As the cheese matures, it develops a beautiful sweet maltiness with subtle, natural marbling throughout—creating a rich, distinctive flavor that our customers absolutely love.

APPEARANCE:

Pale yellow-white with delicate, subtle marbling throughout.

TEXTURE:

Moderately firm yet sliceable, offering a creamy, smooth finish that melts beautifully.

TASTE:

Malty and savory with bright tanginess and gentle sweetness, highlighted by rich brown butter undertones.

PAIRINGS:

This sturdy, excellent melting cheese shines in a grilled cheese sandwich—try it layered with sweet onion jam on thick-cut Pullman loaf or rustic levain bread. It also makes for a wonderful afternoon snack paired with crusty bread and a dollop of savory onion jelly or mild pepper jelly.

Chocolate Stout Cheddar pairs exceptionally well with a wide range of beers, especially crisp lagers and roasty stouts. Though milder and less sharp than many traditional cheddars, it also complements a buttery Chardonnay or a bold Syrah beautifully.
