History of Lefse

The first lefse in Norway didn’t contain potatoes — it was made from flour. Women would travel from house to house, village to village, making lefse to last the winter months. With the rise of the potato in Norwegian cuisine, it was incorporated into lefse, creating the beloved potato flatbread we know today. Norwegian immigrants brought their knowledge and rolling pins to the U.S., and the tradition has been replicated in Norwegian-American homes for more than 150 years.
