Produced exclusively in the canton of Valais and protected by PDO status, Raclette du Valais is a true alpine treasure. Tucked between towering peaks, ancient glaciers, and lush green valleys, this region is where cows graze on fragrant mountain pastures bursting with wild herbs and flowers. That rich, diverse flora gives their milk an unmatched depth of flavor β and it is this whole, unpasteurised milk that creates the cheeseβs signature fresh, tangy character.
Every day, local farmers deliver their milk to small village dairies. Master cheesemakers inspect every batch, then craft the cheese the traditional way: in copper vats using a centuries-old recipe. The curds are gently pressed into wheels, soaked in brine for 24 hours, and aged for at least three months on fragrant red spruce boards. Each wheel receives a unique casein mark and the dairyβs name β a permanent guarantee of quality and traceability.
Only the very best wheels earn the right to be called Raclette du Valais PDO.
