Kefalograviera is a PDO-protected Greek hard cheese made from pasteurized sheep's milk, sometimes blended with a small amount of goat's milk. Aged over 90 days, it delivers a sharp, salty, tangy flavor with nutty and piquant notes — bolder than Kasseri, mellower than straight Kefalotyri.
Appearance & Texture
- Pale golden-yellow with a firm, smooth texture and small air holes
- Thin, light brown edible rind
