Kefalograviera is a PDO-protected Greek hard cheese made from pasteurized sheep's milk, sometimes blended with a small amount of goat's milk. Aged over 90 days, it delivers a sharp, salty, tangy flavor with nutty and piquant notes — bolder than Kasseri, mellower than straight Kefalotyri.

Appearance & Texture

  • Pale golden-yellow with a firm, smooth texture and small air holes
  • Thin, light brown edible rind
  • Slices cleanly without crumbling; also excellent for grating

Serving Suggestions

  • Saganaki: Fry slices until golden and crispy; finish with a squeeze of lemon
  • Grating: Over pasta, moussaka, souvlaki, or baked gratins
  • Cheese board: Pair with olives, cured meats, figs, or jam; pairs well with ouzo, white wine, or full-bodied reds
  • Grilled or baked: As a side for lamb or in sandwiches
  • Mezze: Cubed for appetizer platters
