Isigny Belle Saison is a premium, farmstead-style cowβs milk cheese from the Normandy region of France, crafted by the Isigny Sainte-MΓ¨re cooperative using pasteurized milk from grass-fed cows in the Cotentin and Bessin Marshes. Β This uncooked pressed tomme develops its character through cave-aging on wooden planks for a minimum of 6 months (though some sources indicate initial ripening of 3-5 months), resulting in a semi-firm, smooth texture thatβs tender yet sliceable straight from the fridge. Β Β The natural, edible rind adds an earthy depth, while the paste offers nutty, buttery flavors with floral and hazelnut notes, a subtle fruity undertone from the terroir, and hints of sour cream.
