ADLER Black Forest Smoked “SCHINKEN” sliced ham is an authentic German Schwarzwälder Schinken (Black Forest ham) — a premium, dry-cured raw ham (Rohschinken), not the sweeter cooked version common in the US.
It comes from selected pork hind legs (boneless, ~20% fat). The process involves hand-salting and seasoning with spices (typically garlic, black pepper, coriander, juniper berries, and more), curing for weeks, cold-smoking for about 3 weeks over Black Forest fir brushwood, sawdust, and conifer wood chips (giving the signature dark color and aromatic smoke), then air-drying/ripening for at least 12 more weeks.
Flavor and texture: Pronounced yet refined — salty, savory, nutty, and spiced, with a distinctive subtle-to-bold woody/resinous smoke from the fir/conifers (reviews call it unmatched by other hams). It’s firm but sliceable, rosy-pink inside with white fat marbling, and eaten raw. The pre-sliced US-packaged versions (like the common 3 oz packs from Adler) are vacuum-sealed and ready-to-eat.
