Among the most prized of all wild winter mushrooms, the black trumpet (Craterellus cornucopioides) delivers a sublime flavor — smoky, buttery, and deeply earthy, with a complexity that rivals the morel. Also known as Horn of Plenty and Black Chanterelle, this trumpet-shaped relative of the chanterelle grows in clusters among the leaf litter of deciduous woods, with a season ranging from late summer through late winter depending on region.
Its thin, ruffled cap and grill-less underside give it a distinctive texture — versatile and appealing in a wide range of preparations. The dark color makes a striking visual contrast with pale fish and cream sauces alike.
