Nut Potatoes, also known as Potato Noisettes or Pommes Noisettes (sometimes labeled as Papas Duquesas), are a frozen, pre-formed potato side dish sold in 5.5 lb (2.5 kg) bags.

These are small, bite-sized potato balls (roughly hazelnut-sized, hence the French name “noisette” meaning hazelnut) made from creamy mashed potatoes—often using varieties like Bintje potatoes for their smooth texture. The mash is shaped into balls, pre-fried to create a golden crust, and then frozen for convenience. They deliver a delicate, buttery potato flavor inside with a crispy, crunchy exterior when properly cooked.

Key Features

Texture and Taste: Soft, creamy mashed potato center with a delicate, mild potato taste; the outside develops a crispy golden crust when baked or fried. Some describe them as “buttery” or even slightly nutty in character after caramelization.

Size: Each ball is typically around 6g (about 0.21 oz), making them perfect poppable bites.

Ingredients (typical, varies slightly by brand like Ecofrost, Lutosa, or White Toque): Potatoes (often >91%), palm oil or similar for frying, salt, dextrose, emulsifiers, and spices. They may contain traces of other allergens.

Format: Frozen, oven-ready or fryer-ready product. Popular in foodservice, gourmet retailers, and online (e.g., via Instacart or specialty importers).

How to Prepare

Oven: Bake straight from frozen at around 400°F until golden and crispy (time varies; check package for exact instructions, often 10–15+ minutes).

Deep Fry: Heat oil to 350°F (175°C), fry frozen balls for about 3–4 minutes, then drain. This gives the best crunch.

Serve hot as a side dish—great with meats, poultry, fish, or as a fun appetizer. They appeal to all ages and pair well with sauces, herbs, garlic, honey, or cheeses for elevated presentations.

Background

The term “noisette potatoes” originally referred to hand-cut small potato balls (scooped with a melon baller from whole potatoes) that are sautéed or roasted until golden and nutty. Commercial versions simplify this by using mashed potato formed into balls and pre-fried, turning it into an easy, consistent frozen product that’s a twist on classic mashed potatoes or French fries. They’re common in European (especially Belgian/French) frozen potato specialties and available through wholesalers or gourmet suppliers.

These make an elegant yet approachable side for holidays, restaurants, or family meals—crispy outside, fluffy inside, with minimal prep. Ideal for both home cooks and foodservice.
