Dorothea Goat Gouda with Basil Oil & Potato Skins

On a trip to Holland, we discovered a limited-production Dutch chèvre created by the Van Dijk family. Dorothea — named after the Van Dijk’s mother — was born at the request of celebrated Dutch chef Cas Spijkars, who wanted to win the annual award for “Most Unusual Food.” The secret ingredient? Potato skins, chosen for their deep roots in Dutch culinary tradition. After adding basil oil, coriander oil, and chopped onion to the recipe, Cas and the Van Dijks completed their masterpiece — and won the award.

Only 4,000 wheels are produced each year. Each one is aged under meticulously controlled humidity and temperature conditions, adjusted every few days to ensure proper maturation. Made from pasteurized goat’s milk and aged over 60 days, Dorothea develops a full, nutty flavor with a firm but not hard body — an aroma reminiscent of the fresh outdoors and a flavor that is truly unforgettable.
