Just north of the French border lies Chimay, a town in the Belgian forest of Mont du Secours. In 1850, Trappist monks built a Cistercian Abbey there as a place to study, pray, and work. By 1862, they had added a dairy and brewery — and soon began producing cheese that became a staple at the local marketplace.
This variation of their original recipe is distinguished by a rind washed with Chimay’s famous Trappist beer rather than ordinary spring water, developing an incomparable flavor that delights both nose and palate. Semi-soft in texture, with a nutty, well-finished flavor and a subtle hint of hops and malt. The aroma is pronounced; the taste itself is mild but never bland.
