Caciocavallo La Soresina (also called Caciocavallo Soresina or Latteria Soresina Caciocavallo) is a traditional Italian stretched-curd (pasta filata) cheese from the Latteria Soresina cooperative in the Lombardy region (though the style originates from Southern Italy). It is shaped like a teardrop or gourd (“fiaschetto”), with a smooth, thin yellow rind and a compact, pale off-white to yellowish interior.

Description and Characteristics

  Texture: Semi-hard to firm when aged; it starts smoother and more sliceable when younger, becoming stringier and denser with time. It has excellent melting properties.

  Flavor: Mildly salty and tangy with a delicate, slightly sweet profile when young. As it ages (typically several months), it develops a sharper, more pungent, earthy, and savory finish with subtle fruity or nutty notes. It is less aggressive than some aged Provolone but more complex than fresh pasta filata cheeses like mozzarella. 

  Aging: Usually aged for a few months up to longer periods; the version from La Soresina is often sold at a balanced maturity for versatility.

  Production: Made via the pasta filata method—curds are heated, stretched, and molded by hand into the classic shape, then salted and aged. It belongs to the same family as Provolone, Scamorza, and Mozzarella. 

It is versatile in Italian cuisine: great for melting on pasta, eggplant parmigiana, lasagna, grilled dishes, or pizzas; also excellent on cheese boards with bread, cured meats, or honey. It can be grilled or fried as an appetizer.
