Jean-Yves Bordier is widely regarded as the finest butter maker in France — perhaps in the world. Working from his creamery in Saint-Malo, Brittany, he sources cream from small Norman and Breton farms, churns it slowly in a traditional wooden malaxeur, and works each plaquette entirely by hand. The result is a butter of extraordinary texture and depth, unlike anything produced at scale.
This Smoked Salt Plaquette is one of Bordier’s most distinctive creations: the finest French cream, hand-churned and worked to a smooth, dense consistency, then finished with a delicate smoked salt that adds a subtle, lingering smokiness without overwhelming the natural sweetness of the butter.
