Black Beans are a very good source of Fiber, Folic Acid, Vitamin B1, Protein, and Iron.Β 
Tomatoes are a good source of Vitamins A and C.Β 
Lime is an excellent source of Vitamin C.

INGREDIENTS:

  • Olive Oil – 1 tsp

  • Egg – 1

Β 

  • Egg White – 1

Β 

  • Salt – to taste

Β 

  • Black Pepper – 1/8 tsp

  • Red Chili Powder – 1/8 tsp

Β 

  • Salsa – 1 tbsp

Β 

  • Mexican Cheese – 2 tbsp shredded (optional)

DIRECTIONS:Β 

1. Prepare the Avocado & Black Bean Salad or if you have leftovers, even better.Β Β

2. Crack an egg and an egg white.
Β 
3. Add salt, black pepper, and red chili powder. Whip the eggs.
Β 
4. Heat a pan on medium heat and when hot, add a tsp of oil.
Β 
5. Pour the egg mixture into the pan.
Β 
6. Cook for a few minutes until the bottom is golden.Β  YOU DO NOT NEED TO FLIP THE OMELETTE.

7. Add the avocado & black bean salad on half the omelette.Β  At this point you can add mexican or cheddar cheese to the omelette.Β

8. After a couple minutes, flip half the omelette over the salad.Β  When the salad heats up and the omelette is fully cooked, turn off the gas.

9. Place the omelette on a serving plate.

10. Top with salsa or I used Taco Bell sauce
