Wisconsin’s award-winning BellaVitano meets autumn. Fourth-generation Sartori cheesemakers start with their signature cow’s-milk cheese—creamy like a fine cheddar, nutty and savory like Parmesan—then rub the wheels with warm pumpkin-spice seasonings. It smells like a cinnamon roll at the rind and eats more savory than sweet: buttery, slightly tangy, with a cozy spice finish. Slice it for a fall board, grate it over roasted squash or soup, or pair it with cider, oatcakes, and a little pumpkin butter.
