Rullepølse (rolled sausage) is a traditional Danish cold cut with deep roots in Scandinavian cuisine. A piece of pork belly — or veal — is flattened, spread with herbs, salt, pepper, allspice, and chopped onions, then rolled, brined for several days, pressed, and cooled. The result is a beautifully layered, aromatic cold cut that slices thin and clean.
